The Aldudes valley, in the heart of Lower Navarra , has the reputation of being one of the most isolated in the entire northern Basque Country . Just above Baigorri, it is made up of three villages: Banka, whose altitude ranges between 200 and 1,300 metres, Aldude, the cradle of the Basque pig , and Urepel , the gateway to the ‘Kintoa’ region (‘El Quinto Real’ in Spanish). and to the mountainous area of Sorogain .

Saint-Étienne-de-Baïgorry is one of the 15 villages in the production area of the AOC appellation for Irouléguy wine, one of the smallest vineyards in France. For more than 60 years, the Irouléguy winery has been producing rosé, red and white wines with character, in the image and likeness of their terroir. Noteworthy is its 13th-century church with its three galleries and its contemporary baroque-style organ.

Gastronomía con prestigio

Desde el punto de vista gastronómico este valle destaca por haber hecho suyas 3 de las 4 DOP (Denominación de Origen Protegida) que ostenta el País Vasco norte. Por un lado, todo el valle forma parte de la DOP Ossau-Iraty, que pone en valor su queso de oveja. Un queso elaborado por los productores de la comarca y que proviene en su totalidad de ovejas autóctonas denominadas ‘Manex’ cabeza negra y ‘Manex’ cabeza roja.

Por su parte, la localidad de Aldude sobresale por ser la cuna del jamón DOP Kintoa, producido con una raza porcina autóctona también conocida como ‘Euskal Txerria’. Por último, Baigorri es la sede de la bodega cooperativa Irulegiko Arnoa. Esta última es una Denominación de Origen Protegida que se extiende a lo largo de 15 municipios entre Baigorri y Donibane Garazi o, en francés, Saint-Jean Pied de Port.
