Our shepherd’s cheeses are a culinary gem of recognized quality, made exclusively with raw milk and natural rennet from our herd of Latxa sheep, produced in the foothills of the Malloas. All our cheeses are handmade, combining the ancestral knowledge of the shepherds of the Sierra de Aralar with modern production techniques.
